BLACK PLUM CRISP

Hi Everyone! I hope your week is going well so far! It’s hard to believe that tomorrow is the first day of October. And you know what that means… less than 90 days until Christmas! I start getting excited about Christmas as soon as the summer starts coming to an end, so this is pretty happy news to me! I’ve been meaning to share this recipe with you for the longest time, and finally got around to doing it now. I love fruit crisps, and this black plum one is one of my favorites. The soft, tart filling with the sweet, crispy topping is so delicious, especially under a giant mountain of vanilla ice-cream!
BLACK PLUM CRISP
*Serves 6*

YOU WILL NEED
FILLING
5 – 6 black plums (depending on their size)
1 – 2 tbs granulated sugar
1 tsp lemon juice
2 tbs all-purpose flour (or cornstarch)
TOPPING
3/4 cup all-purpose flour
3/4 cup rolled oats
8 tbs (4oz) unsalted butter, softened
1/4 cup plus 3 tbs brown sugar

DIRECTIONS
1. First, prepare the plums. Cut them into slices and in a large bowl, toss them with the sugar, lemon juice and flour (or cornstarch), then place them in your baking dish. Next, prepare your topping, by mixing together all the topping ingredients until you have large crumbs. Spread them evenly over the plums. Place the whole baking dish onto a large baking sheet lined with parchment paper, so that it can catch any juices that might leak from the crisp as it bakes… it makes clean-up so much easier!

2. Preheat your oven to 350 deg F and bake the crisp for about 35 – 45 minutes, until the juices are bubbling and the topping is beautifully golden brown. Let cool for a couple of minutes, then serve with vanilla ice-cream! (*Note: Make sure to check on the crisp after about 20 minutes of baking time, and if the topping is getting too dark, cover it with some foil to prevent burning.)
