Light & Healthy Two Ingredient Pancakes

Hi Everyone! If you’re looking for a healthier breakfast option, here’s one for you! All that’s in these “pancakes” is eggs and bananas! Now, I won’t pretend that they taste just like the real, fluffy buttermilk pancakes, but they are a great light and healthy alternative! They are so easy to whip up, you can flavor them with some vanilla, cinnamon or honey and serve them with extra bananas or berries for a light but hearty breakfast!

LIGHT & HEALTHY TWO INGREDIENT PANCAKES
*Makes 1 serving*YOU WILL NEED
1 banana
2 eggs
Optional: ground cinnamon or vanilla extract

DIRECTIONS
In a small bowl, whisk together the two eggs and one ripe mashed banana. You can add in some ground cinnamon, vanilla extract or honey for some extra flavor and sweetness if you like. You can also change up the banana/egg ratio, this is just what I do. Cook the pancakes as you would regular pancakes, for a couple of minutes on each side, until the inside has cooked through. I used a 1/4 cup measure for the pancakes just to keep them all the same size. Serve hot with extra bananas or berries.

Sour Cream Pancakes with Blueberries

Hi, Everyone! I hope you’ve all had a great weekend and are having a good Monday so far! I’ve finally recovered from our amazing trip to Ecuador (read about it HERE and HERE!) and have my voice back again! I lost my voice towards the end of the trip and just couldn’t seem to get it back, I’ve never been so frustrated! But this week has been off to a good start and I have a great breakfast recipe to share with you today! These Sour Cream Pancakes with Blueberries make for a great weekend breakfast, and are so fluffy and delicious! The sour cream gives the pancakes great flavor and makes them so hearty and filling! Along with some fresh blueberries and (lots of) maple syrup, these are the perfect thing to wake up to on a lazy morning!

SOUR CREAM PANCAKES WITH BLUEBERRIES
(Recipe from The Pioneer Woman)
*Makes 2 hearty portions*

YOU WILL NEED
1 cup sour cream
7 tbs all-purpose flour
2 tbs granulated sugar (add an extra tbs if you like sweeter pancakes)
1 tsp baking soda
2 eggs
1/4 tsp salt
1/2 tsp pure vanilla extract
1/2 cup fresh blueberries
Butter/oil for cooking
Syrup for serving

DIRECTIONS
1. In a medium sized bowl, whisk together the flour, sugar, baking soda and salt. Add in the sour cream and stir gently. Then, add in the eggs and vanilla extract, and mix just until all the ingredients have combined. (Don’t worry if there are some lumps left in the batter.) Gently stir in the blueberries.

2. Add some butter or oil (whatever you prefer using) to your griddle or pan, and make your pancakes, portioning the batter using a 1/4 cup measure. Cook until the edges begin to brown a little and bubbles begin to pop up on the pancakes, then flip them over and cook until the pancakes are done!

Quinoa Breakfast Bowl with Fruit, Nuts & Seeds

Hey Everyone! Are you a big breakfast eater? I never really used to eat breakfast growing up, other than the occasional morning stop at the bakery with my dad on my way to school, but things have definitely changed since then, and I love a good breakfast now! My morning always starts off with a big cup of English Breakfast Tea, but as for my breakfast choices, they are constantly changing because I get bored of eating the same breakfast very quickly. Plus I find that switching things up and making breakfast a little more interesting will make me more likely to eat it, and I won’t end up snacking on random things all morning. Sometimes I make a healthy breakfast at the beginning of the week that can be reheated or will last for a couple days (like this baked oatmeal or this granola) and then on weekends or when I’m craving something sweet, I tend to make something a little more indulgent (like this baked French toast) to have with my morning tea, or even eat for an afternoon treat. Another breakfast that I love and that can easily be prepared the night before and simply assembled in the morning is a big, hearty quinoa bowl. Quinoa is so filling and satisfying which makes it a great breakfast choice, and paired with lots of fresh fruit, nuts, seeds or yogurt, it’s a great healthy breakfast option!

Quinoa Breakfast Bowl with Fruit, Nuts & Seeds

QUINOA BREAKFAST BOWL WITH FRUIT, NUTS & SEEDS

YOU WILL NEED
Cooked quinoa (about 1/4 t0 1/2 cup per portion)
Fresh fruit (I like to use bananas and various berries)
Yogurt (Plain or Greek)
Chopped nuts of your choice (I used walnuts & pine nuts)
Seeds of your choice (I used pumpkin seeds and sunflower seeds)
Optional: sprinkling of brown sugar/cinnamon or a little bit of maple syrup

DIRECTIONS
This barely needs explaining, but basically you want to cook your quinoa and let it cool. I use about 1/4 cup uncooked quinoa (it just about doubles in volume once it cooks) per serving, and that makes for a super hearty breakfast! Make sure you rinse the quinoa before cooking it, and simply follow the cooking instructions on the box (usually quinoa cooks in about 15 minutes). Then just throw everything together in the bowl, and your breakfast is ready! This would be a great make ahead breakfast too, you could cook your quinoa the night before, and have all the other ingredients portioned off, washed, chopped and ready to go, and then simply assemble your bowl in the morning! So easy, and such a satisfying, nutritious breakfast!

Summer Baking

Hi Everyone! I just wanted to stop by and wish you all a great weekend, and to share some of my favorite summer dessert recipes with you! I love baking in the summer because of all the great fresh fruit that’s available, it makes such a difference! The ripe, juicy berries and fresh, fragrant plums, peaches and apricots… they add so much flavor (and vitamins, I like to think!). It’s such a great time to bake and make the most of the fresh ingredients at this time of year. The only problem I ever have is that at this time of the year the kitchen can get VERY hot with both of the ovens and the hob on. Even with the doors and windows open, baking can be a sweaty ordeal. If you have the same problem, try WireNut Home Services or someone similar to have air conditioning installed in your kitchen. Having an icy breeze blow over you as you stand over a hot oven is a welcome relief, and it can help you to enjoy the experience. Sometimes getting too hot in the kitchen can be overwhelming, making you can lose your appetite. Instead, it’s better to be cool and breathe in all of the delicious smells, helping every kitchen creation become an enjoyable one.

I’ve been baking for a good while now (longer than I care to admit!), so I have a good range of equipment at my disposal. Summer baking is a little different to winter baking, so you might need a few new things. Don’t forget you can always add to your baking collection from websites such as PromoCodeWatch.com to get discounts on your baking equipment! I hope you enjoy these recipes I’m sharing with you, and that you have fun baking for your friends and family this summer! But first, how cute are these mugs that my mom got me from Whittard?! Pretty much a baker’s life motto and some solid good life advice!

These Blueberry Crumb Bars (Left: recipe HERE) are one of my summer favorites! They are a great way to use fresh blueberries, or any other summer fruit actually! The sweet crumb topping really makes these, I can’t wait to make another pan of these soon! Or if you prefer using something other than blueberries, you can make these Apple Crumb Bars (Right: recipe HERE) which are also really tasty! The tart apples, the crunchy walnuts, the buttery topping and the sweet glaze…. oh so good!

For another berry, strawberry, recipe, try this Strawberry Layer Cake (Right: recipe HERE)! I love love love layer cakes like this because they look impressive, yet are one of THE easiest desserts to throw together! All you need is three things: cake, whipped cream and fruit! I know these Sour Cream Pancakes with Blueberries (Left: recipe HERE) are technically breakfast, but they are so good they might as well be dessert for breakfast! As far as I’m concerned, sour cream makes everything better, including these pancakes! And the fresh juicy berries make this a great summer breakfast!

If you love fruit crisps, this Plum Oatmeal Crisp (Left: recipe HERE) is a great one to try! I love Italian plums, and they work so well here! The tart, juicy filling is so good paired with the crunchy oatmeal topping! For a similar recipe, try this Summery Peach Cobbler (Right: recipe HERE) which is a great way to use fresh peaches!

To cool down on a hot day, try this Strawberry & Mint Flavored Water (Left: recipe HERE) which is so refreshing! I LOVE making these, because what could be better than ice-cream sandwiched in between two homemade chocolate chip cookies, coated in chopped nuts and candy bars! YUM!

And lastly, here are some s’mores inspired summer desserts! Oven Baked Banana Boats (Left: recipe HERE) that can either be made at home in your oven, or outside on your campfire! The best part is, you can stuff them with any delicious treats you can think of, wrap them up in some foil, and a couple of minutes later, you have the most delicious ooey-gooey summer treat to enjoy! Or try these Summery S’mores Treats (Right: recipe HERE) which are super quick and easy to make, and great to share with friends!
