Hi, Everyone! I hope you are all having a great weekend! I wanted to share my Daisy Sugar Cookies with you today, that I made to celebrate the arrival of spring! I love daisies, and every time I see them, I think of the movie, You’ve Got Mail, and the part where Kathleen says, “I love daisies. They’re so friendly. Don’t you think daisies are the friendliest flower?”And she was so right, they are such friendly flowers. There is something so cheerful and happy about them. Here’s the recipe for these Daisy Sugar Cookies…

DAISY SUGAR COOKIES
(Recipe from Martha Stewart)
*Makes about 2 dozen cookies*

YOU WILL NEED:
SUGAR COOKIES
2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 cup sugar
1/2 cup (4oz) unsalted butter
1 large egg
2 tbs milk
1/2 tsp pure vanilla extract

ROYAL ICING
1 cup confectioners’ sugar
2 tsp milk
2 tsp light corn syrup
Food coloring

DIRECTIONS

1. First, prepare your sugar cookie dough. In your electric mixer bowl, cream together the butter and sugar, then add the egg, milk and vanilla extract. In a small bowl, whisk together the flour, salt and baking powder. With the mixer running on medium speed, add the dry ingredients to the wet in three portions. Once you have a soft dough, shape it into a disk, wrap it in plastic wrap and let it rest in the fridge for about 30 minutes.

2. Take your dough out, and roll it out on a floured surface to about an 1/8 inch thickness. Preheat your oven to 350 deg F and line your baking sheets with parchment paper. Cut out your shapes, and place them on your baking sheets. Bake for about 8 minutes, or until the edges begin to brown very slightly. Cool completely before decorating.

3. Once the cookies have cooled completely, prepare your royal icing. Whisk all the ingredients except for the food coloring together (make sure it’s completely smooth and there are no lumps). You may need to add more milk or corn syrup, depending on the consistency you want. Add your food coloring in to get your desired color and decorate your cookies! (*Note: I doubled the royal icing recipe to have enough icing for all the sugar cookies that the recipe made)

These are darling. I will be trying these. I made a lemon crinkle last week in anticipation of Easter week – turns out they were sooo dry, I was so upset I baked a loaf of bread – (not too Eastery – is that a word?). I am working on a save, but I will probably stick to a tried and true like Martha. Again these are just darling.

does this dry hard and how is the taste compared to buttercream
Yes, it dries hard. You may need to adjust the amount of liquid in the icing to get the consistency you want.
i tried to make these cookies and the recipe was not that helpful my dough was way too sticky to even be rolled out….it took about an 1 hour and 20 minutes for it to be able to roll out
That’s strange, I’ve been using this Martha Stewart recipe for several years. As the recipe says, you absolutely need to let it sit in the fridge (for a minimum of 30 minutes, but obviously if it’s still too sticky, you need to leave it in there for longer. You can even leave it in overnight, then work on the cookies the following day). If you want to speed up the process, you can put it in the freezer for a little while instead (just make sure you are watching it and you don’t let it freeze, just get firm).
where do you find the choc buttons
You could probably find some at a store that sells specialty baking supplies, or sometimes you can luck out and find some at a grocery store in the baking section… you can also simply just use white icing for the cookie centers.
