Quinoa Breakfast Bowl with Fruit, Nuts & Seeds

Hey Everyone! Are you a big breakfast eater? I never really used to eat breakfast growing up, other than the occasional morning stop at the bakery with my dad on my way to school, but things have definitely changed since then, and I love a good breakfast now! My morning always starts off with a big cup of English Breakfast Tea, but as for my breakfast choices, they are constantly changing because I get bored of eating the same breakfast very quickly. Plus I find that switching things up and making breakfast a little more interesting will make me more likely to eat it, and I won’t end up snacking on random things all morning. Sometimes I make a healthy breakfast at the beginning of the week that can be reheated or will last for a couple days (like this baked oatmeal or this granola) and then on weekends or when I’m craving something sweet, I tend to make something a little more indulgent (like this baked French toast) to have with my morning tea, or even eat for an afternoon treat. Another breakfast that I love and that can easily be prepared the night before and simply assembled in the morning is a big, hearty quinoa bowl. Quinoa is so filling and satisfying which makes it a great breakfast choice, and paired with lots of fresh fruit, nuts, seeds or yogurt, it’s a great healthy breakfast option!

Quinoa Breakfast Bowl with Fruit, Nuts & Seeds

QUINOA BREAKFAST BOWL WITH FRUIT, NUTS & SEEDS

YOU WILL NEED
Cooked quinoa (about 1/4 t0 1/2 cup per portion)
Fresh fruit (I like to use bananas and various berries)
Yogurt (Plain or Greek)
Chopped nuts of your choice (I used walnuts & pine nuts)
Seeds of your choice (I used pumpkin seeds and sunflower seeds)
Optional: sprinkling of brown sugar/cinnamon or a little bit of maple syrup

DIRECTIONS
This barely needs explaining, but basically you want to cook your quinoa and let it cool. I use about 1/4 cup uncooked quinoa (it just about doubles in volume once it cooks) per serving, and that makes for a super hearty breakfast! Make sure you rinse the quinoa before cooking it, and simply follow the cooking instructions on the box (usually quinoa cooks in about 15 minutes). Then just throw everything together in the bowl, and your breakfast is ready! This would be a great make ahead breakfast too, you could cook your quinoa the night before, and have all the other ingredients portioned off, washed, chopped and ready to go, and then simply assemble your bowl in the morning! So easy, and such a satisfying, nutritious breakfast!

Homemade Burrito Bowls

Hi Everyone! So we have gone from dead of winter to pretty much summer temperatures (well, at least compared to the past couple of months!) within a matter of days! The weather is most definitely very confused, which is just fine with me, because I’ll happily trade in my winter jacket for a sweatshirt! Yesterday I had the windows wide open because it was so nice and warm outside, while there was still snow on the ground! Yep, the weather is most definitely confused. But it finally feels like spring is around the corner, putting me in the mood for some lighter dinners after all the comfort food we’ve been devouring for the past couple of weeks! These homemade burrito bowls are so fresh, filled with lots of good ingredients – grilled chicken, brown rice, lots of vegetables (and cheese and sour cream, but that’s your dairy, right?!) and are such a quick and easy dinner to throw together on a busy week night! You could even prepare the chicken and rice beforehand, and then simply heat up and assemble everything when you’re ready for dinner. It’s also completely customizable, you can use other vegetables, add steak slices instead of chicken, make some fresh salsa…. the possibilities are endless!

Homemade Burrito Bowl
HOMEMADE BURRITO BOWLS
*Serves 2*

YOU WILL NEED
2 chicken breasts, skinless & boneless
Romaine lettuce
Cherry tomatoes
1 avocado (or store bought guacamole)
1 lime
1 can of corn
1 can of black beans
Shredded cheese
1 – 1 1/2 cups cooked rice
Sour cream
1 tbs chili powder
2 tsp garlic powder
1/2 tsp cumin
1 tsp salt
Dash of pepper

DIRECTIONS

1. First, prepare your chicken. In a small bowl, mix together the chili powder, garlic powder, cumin, salt and dash of pepper. Butterfly your chicken breasts and rub each side with the chili powder mix. Then, grill them, let them rest for about a minute, and cut into medium sized slices.

2. Next, prepare all your toppings, you want everything in bite size pieces; so quarter your cherry tomatoes and shred the lettuce. You can either use store-bought guacamole, or make your own (I make it by simply mashing up a ripe avocado, seasoning it with salt and pepper, and adding a squeeze of about 1/2 of a small lime). Shred your cheese, and mix together the corn and black beans (make sure you drain the cans of the liquid and then thoroughly rinse the corn and beans).

3. Lastly, assemble your burrito bowls! Start with the rice on the bottom (I use brown rice to keep things healthy! You can add some cilantro to it, I leave it out, but if you like the flavor of it add it to the rice), then add the corn and bean mixture, lettuce, chopped tomatoes, sprinkle with the shredded cheese, top with the slices of grilled chicken, then add a dollop of sour cream and guacamole, topping the whole thing off with a wedge of lime to squeeze over the top!

DIY Lace Giftwrap Bows

Hi Everyone! Happy November! I hope you all had a good weekend. It feels like everything went from fall to winter here pretty much overnight this weekend; we went from sunny fall weather to freezing in a thick sweatshirt on Halloween, and from stores displaying all things fall to turning into Santa’s workshop! I guess the holidays really are just around the corner now. And since that means lots of gift wrapping in the next couple of weeks (because I am determined to get my Christmas shopping done early this year and not have to go through the shopping madness that starts mid-December!) I thought I would share a fun little gift wrapping DIY with you today! I love anything with lace, and thought these bows would look so sweet with some kraft wrapping paper. They are not necessarily Christmas themed, so you could use these all year round! Here is how you can make them…

DIY LACE GIFTWRAP BOWS
 .
YOU WILL NEED
Lace or lace ribbon (if using ribbon, make sure it’s at least 3/4 inch wide)
Ruler & Scissors
Hot Glue Gun

DIRECTIONS
To make these lace bows, you can follow my tutorial I posted for making handmade paper bows (find it HERE), the only difference is that you either need to cut strips of lace (keeping them the same length and width as the paper strips in the tutorial) or if you are using lace ribbon (which you want to be at least 3/4 inch wide), cut three 10 inch pieces, three 9 inch pieces, and 1 4.5 inch piece, just like with the paper strips. You also need to be more careful when using the hot glue gun because of all the gaps in the lace, make sure you don’t burn your fingers!

No-Knead Bread Bowls

Hi Everyone! With the fall season also comes soup season, which I am very happy about since I could pretty much eat soup for every meal of the day, every day. At least in the fall. I love baking bread and do so pretty regularly, often using the NY Times No-Knead Bread recipe which is so easy and always very good! It always makes a beautiful loaf of bread that’s great to serve with salads, pastas, soups and stews, but can also be used to make something else… soup bread bowls! Because you can hardly find a cozier meal than some steaming hot soup in a big bread bowl. Sure, it’s not exactly light on the calories or the carbs, but on those days when you are craving some serious comfort food, it’s just what you need!

NO-KNEAD BREAD BOWLS
(Adapted from The NY Times No-Knead Bread Recipe)
 .
YOU WILL NEED
3 cups all-purpose flour
1/2 tsp dry yeast
2 tsp salt
1 5/8 cup water
Cornmeal or extra flour for dusting
Delicious soup to fill the bread bowls with!

DIRECTIONS
1. Combine the all-purpose flour, yeast and salt in a large bowl. Add in the water and stir together until a super sticky dough forms. Then, cover the bowl with plastic wrap and let it sit in a warm spot for 12 – 20 hours. (I usually let mine rise for about 14 hours.)
 .
2. Once the rising time is up, you should have a VERY sticky dough with lots of bubbles all over the surface. It will seem like you won’t even be able to work with the dough because it’s so wet, but don’t worry about that, that’s the consistency you are looking for! Take the dough out of the bowl and place it on a generously floured surface, divide it half, and form each half into a loaf shape (make sure you cover your hands with flour, because this will be very sticky!) Sprinkle both with more flour and cover with some plastic wrap. Let it rest for about 15 minutes.

3. In the meantime, preheat your oven to 450 deg F and place your baking dishes in the oven while it preheats. (The no-knead bread is baked in a Dutch oven or a covered casserole dish. I used two 2 quart covered casserole dishes to bake these two bread bowls.) Once the oven is preheated, carefully take the hot baking dishes out and place a loaf in each. Cover with the lid and let bake for about 30 minutes, then take the lid off and bake for about another 15 minutes, or until the loaves are nice and golden on top! Let the loaves cool completely before cutting out the holes on top and hollowing them out to serve your soup in! (*Note: this made two BIG & hearty sized bread bowls, if you want smaller bread bowls, divide the dough into three or four loaves, and adjust baking time so they don’t burn!)

Hearty Quinoa Breakfast Bowl

Hey Everyone! Happy Friday! I hope you all have a great weekend and enjoy some beautiful summer weather! I wanted to stop by and share my new favorite breakfast with you today! This Quinoa Breakfast Bowl is a great hearty breakfast that will help you stay full at least until lunchtime! Maybe you’d never think of starting the day with quinoa, but with its high protein, fiber and iron content, it’s a great choice, and a good alternative to sugary cereal or oatmeal. And after a big bowl of this colorful goodness, it’s hard not to have a good morning!

HEARTY QUINOA BREAKFAST BOWL
 .
YOU WILL NEED
1/4 cup – 1/2 cup cooked quinoa
Variety of fruit
Yogurt
Chopped nuts or seeds
Drizzle of honey
 .
DIRECTIONS
All you need to do is cook your quinoa (you can cook it with milk instead of water to make it creamier, but I usually just use water), let it cool slightly and then put it in a big bowl. Add some fruit (I like adding mixed berries), chopped nuts (almonds, pecans or walnuts), yogurt (plain or flavored, or add some Greek yogurt to make it even heartier) and drizzle everything with some honey!

Tied with a Bow – Stenciled Bow Brownies

Hi, Everyone! Happy Friday! I hope you all had a wonderful Valentine’s Day! I know that you may be stuffed with all those Valentine’s chocolates and luscious chocolate desserts, but I’m sharing a dessert idea with you today anyway! Because as far as I’m concerned, you can never have enough dessert! And these Stenciled Bow Brownies are a great one! I saw Martha Stewart do this a while ago, and I’ve been wanting to try it ever since. It’s a great way to make brownies look a little extra special, whether they are homemade or come from a box mix. Here’s how you can make your own…

 To make these Stenciled Bow Brownies, first make your bow stencil. You can either make your own like I did, or you can use this one from Martha Stewart. Draw out (or print out) your stencil on a piece of card stock and cut it out carefully. Make sure that the size of your stencil works with the size of your baking pan that you will be baking your brownies in. Then, bake your brownies and let them cool completely. If you need to, trim the edges. Once the brownies have cooled completely, lay your stencil on top and sprinkle the whole thing with powdered sugar. Carefully lift the stencil off and viola! A beautiful bow!

Handmade Paper Bow Tutorial

Hi, Everyone! I hope you all had a great weekend! Since a special someone’s birthday is coming up soon, I’ve been looking for some cute gift wrapping ideas, and one of my favorite things I found were handmade paper bows! I tried a couple different ways of making them, and finally came up with this, so I’m sharing the tutorial with you today! I love nicely wrapped gifts, it just makes what’s inside the gift even more special! These bows may look a little complicated at first, but they are actually really easy to make, and once I started making a lot of them it only took me a couple of minutes to make each! All you need is a sheet of paper (you can use anything from brown paper bags and magazine pages to scrapbook paper and felt!), a hot glue gun and a good pair of scissors! Later on in the week, I will show you how I used these and other recycled materials for cute gift wrapping ideas, so be sure to come back! Here is a tutorial for my paper bows…

HANDMADE PAPER BOW TUTORIAL

1. First, cut your paper into 7 strips, each 3/4 inch wide. Cut the first three strips to be 10 inches long, the next three strips 9 inches long, and the last one to be 4.5 inches long.

2. Next, begin twisting each of the 6 long strips so that they have a loop at each end (see picture below). Secure with hot glue in the center. Make a loop out of the last strip (the 4.5 inch one).

This is what all all the loops will look like when you are done! Now you are ready to start layering and sticking them down to make your bows!

3. Layer and stick the three largest pieces, then layer and stick the next three pieces, and finally stick the loop in the center.

Pink and Gray Bow Pillows

Hi, Everybody! I hope that you have all had a great week and have some fun plans for the weekend! Today I wanted to show you some Bow Pillows that I recently made for a customer. She requested gray pillows with pink bows, a color combination that I love! Here are some pictures of the pillows that I made for her!

All of the pillows are made according to my own design, and every part of them is handmade. It’s a pretty simple design that consists of a classic envelope pillow cover with an oversized bow that is sewn into the sides of the pillow case. I love the pink and gray together, I think it’s such a pretty color combination. It looks soft, elegant and sophisticated, and I love how the pink bow pops on top of the gray background.

Christmas Wreath with dried oranges

Isn’t a festive wreath on your front door the best “Welcome home”? Not that we leave the house that often these days, but it always makes me happy to come home and be greeted by this sight. I wanted to create a really classic look for my wreath this year, and this is what I came up with…. fresh greenery, pine cones, dried orange slices and thin, copper colored velvet ribbon. Scroll down to see how to make one!

HOW TO MAKE A CHRISTMAS WREATH WITH DRIED ORANGES

  1. To make the dried oranges, thinly slice a couple of oranges and place the slices on parchment paper lined baking sheets. Bake at 200 deg F for anywhere from 2 to 5 hours (mine took closer to 5 hours), flipping them every hour. Let cool completely.
  2. Make small bunches of two or three orange slices, and join them together at the top with some floral wire, then attach the floral wire onto the wreath, hiding it behind some of the greenery. Continue doing this until you’re happy with the look. (My wreath already had pine cones on it, but if yours doesn’t and you want to use some, use floral wire to attach those too.)
  3. Pick out your ribbon – I used this beautiful copper, rusty colored thin velvet ribbon from this amazing Etsy shop. Make your bow, then loop some floral wire through the back of it and attach it to the top of your wreath!

Pumpkin Bread

After a very long, hot summer, this week finally brought those crisp September mornings I’ve been waiting for, and today was the perfect day for the first pumpkin recipe of the season! This has been a strange year to say the least, and having spent the majority of spring and summer in quarantine, it’s hard to believe that fall is almost here. If you’re looking for a pumpkin recipe to try out this season, this Pumpkin Bread has been one of my go to’s for a couple years now, and I hope you love it as much as I do; it’s sweet with a hint of warming spices, and with a cup of hot apple cider, it screams fall!

PUMPKIN BREAD
*Makes 1 loaf*
(Recipe adapted from Taste of Home)

YOU WILL NEED:
1 2/3 cup all-purpose flour
1 1/2 cups granulated sugar
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup canola oil
1/2 cup water
1 cup pumpkin puree
2 eggs
1/2 cup chopped walnuts
1/4 tsp ground nutmeg
1/4 tsp ground cloves
Optional: 1/2 cup raisins

DIRECTIONS
1. Preheat your oven to 350 deg F and prepare your loaf pan (either grease it or line it with parchment paper.

2. In a large bowl, whisk together the eggs, oil, water and granulated sugar. Add pumpkin puree. Next, sift in all the dry ingredients and fold together gently until a smooth batter forms. (If you’re adding raisins fold them into the batter as well.)

3. Pour the batter into your prepared baking pan, and evenly sprinkle the chopped walnuts on top (*Note: you can also simply fold them into the batter instead of just sprinkling them on the top). Bake for 60 – 75 minutes, or until an inserted toothpick/cake tester comes out clean. (If the loaf starts getting too dark on top, loosely cover it with foil.) Let cool before slicing.
